This icebox method involves indirect heat which helps in retaining the minerals such as potassium, magnesium, zinc, iron, and vitamins such as vit B1, B2, B3 and B6.Other than the nutritional benefits this sugar is also a treat for diabetics as the glycemic index of coconut sugar is 35 which is almost half when compared to that of honey or jaggery.
